Cellaring:
Elegant in style, Sombra will accompany most dishes. Rice based dishes such as Paella or Risotto are perfect. Try it slightly chilled in summer with salad or as an aperitif.
Winemaking:
Our Tempranillo vines are grown in a sand and black loam hill just to the south of the McLaren Vale township. Fruit was picked on 27 Feb 2025 towards the end of a very early and compact vintage. On arrival at the winery, some juice was run off before destemming to better promote the texture of the wine with the must then yeasted in oak vats. We fermented the wine relatively cooly to promote freshness and elegance. The wine was pressed and spent a short time in older French oak hogsheads after malo-lactic fermentation. Our aim was to produce a contemporary, medium bodied style of wine where fruit played the essential role over oak influence. The wine was bottled in late July. Tempranillo, Spain’s most widely planted red variety, thrives in McLaren Vale’s Mediterranean climate, where warm days are tempered by cool coastal breezes. Sombra’ — Spanish for shadow — is named after Turraparri Creek (Aboriginal Kauna language), which runs through the vineyard block.
Background:
Tempranillo originates from Spain where it is the most widely planted red variety. McLaren Vale provides an ideal region for this variety where the warmth of the day is softened by the cool coastal breezes at night. 'Sombra', Spanish for shadow takes its name from Turraparri Creek (Aboriginal Kauna language) which runs through the Tempranillo vineyard block.
Vintage Conditions:
The 2025 McLaren Vale vintage was defined by warm, dry conditions that delivered exceptional fruit quality, concentration and vibrancy. Warmer-than-average temperatures led to early bud burst, flowering, veraison and harvest, with vintage commencing nearly two weeks ahead of the long-term average. Dry conditions reduced disease pressure and supported healthy vine growth, while smaller berries produced intense flavour concentration — a hallmark of the season. Despite a brief February heatwave, fruit quality remained outstanding. The compact harvest concluded by the end of March, producing wines with excellent balance, depth, structure, vibrant flavour and fine natural tannins.
