Jancis Robinson has described it as 'subtly fragrant and gently flirtatious', a more 'feminine side of Cabernet Sauvignon'.

The grapes were de-stemmed and fermented in a single small fermenter and pressed once the sugar had been depleted. We wanted the fruit of the grape to shine so maturation was in older oak to gain complexity but not detract from the primary fruit. Mourvèdre is grown widely in southern France and in Spain (where it is known as Monastrel). Along with Grenache it is typically one of the last grape varieties to ripen in our McLaren Vale vineyard.

We named this hill ‘Ghost Hill’ as a link back to the Hamilton Family’s roots in Dover, UK, where they embarked the 'Katherine Stewart Forbes' to make their journey to South Australia in 1837, when Richard Hamilton 1st planted South Australia’s original wine producing vineyards. The story goes that a young woman would meet the ghost of her lover, a dispatch rider who died in the course of his duty, at night at the foot of Ghost Hill near the old Church.

Harvesting was at night to take advantage of cooler temperatures. Bunches were destemmed then allowed to ferment for 7-10 days on skins before pressing. The oak used for maturation was new and used French to aid the perception of fruit sweetness. Fine wine received a light fining to polish the soft tannin structure. This Shiraz has great depth of flavour while retaining elegance. Tannins are soft yet persistent and a fine acidity provides finesse with a clean tight finish making it an excellent food wine. - [Leconfield Coonawarra 'Old Vines' Riesling](https://richardhamiltonwines.com/product/leconfield-coonawarra-old-vines-riesling-2/) - VINTAGE 2025 Over the years the Leconfield Riesling has taken its place amongst the best examples in Australia. Our 50-year-old Riesling vineyard comprises some of the original planting’s on the estate; mature vines which produce a crop of intensely flavoured fruit with wonderful varietal character every year. Sydney Hamilton planted the 6 acre (2.6 ha) Riesling vineyard in 1974 and we have now completed a restructuring of the vineyard to sustain it over the next 40 or more years. Harvesting took place in the cold early morning and grapes were placed in our air-bag press within minutes of picking. This single batch of free-run juice was cold settled and cool fermented with some light solids using an aromatic yeast to enhance its fragrant fruit aromas. Following fermentation, the wine was allowed to settle on its yeast lees then ultimately received a light fining to aid clarification.

Co fermentation is a winemaking practice in which varieties are harvested and fermented together to allow the characteristics of each variety to meld together rather than the more common practice of blending post fermentation. The 2022 Reserve Cabernets was matured on oak for 27 months - 33% New Taransaud French Hogsheads, 67% 3 year old French Hogsheads. A beautifully elegant wine, the palate has generous flavour and persistence with round silky tannins.

Selecting Coonawarra as the region to fulfil his ambitious dream, Sydney began to plant vines in the now famed Coonawarra terra-rossa over limestone soils. A true Reserve Wine with the premium grapes selected from the vineyard at harvest. Fine medium to full bodied palate with silky tannins and great persistence of flavour, this wine has the elegance and structure expected of fine Cabernet Sauvignon. We think that with every release of Leconfield Sydney we realise Sydney’s dream. Hand pruning, crop thinning and shoot positioning of vines achieve ideal sunlight and ventilation, to ensure optimal fruit ripening. Individual bunch selection of only the most consistently ripe grapes from the most outstanding vines, delivers an exceptional final parcel. Fruit is pressed to open top Taransaud French oak vats where the ferment is pumped over daily to achieve optimal colour and flavour extraction. Primary fermentation is completed in new French oak, before the undertaking of several rackings and the transfer to three-year-old French oak hogsheads to complete seven months of maturation. Post bottling the wine receives a further two years bottle maturation before release – reserve wine in its truest form.
